Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 (16 ounce) cans black beans, rinsed
  • 1 3/4 cups beef broth
  • 2 tablespoons chili powder
  • 1 garlic clove, minced
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon ground cumin
  • 1/2 cup (2 ounces) shredded Monterey Jack cheese

Preparation

Step 1

In a medium saucepan, heat oil over medium heat.

Add flour and cook 2 to 3 minutes, until flour has browned, stirring frequently. Add remaining ingredients except cheese; mix well. Cook 5 to 6 minutes, until well blended and bubbling, stirring often.

Reduce heat to low and simmer 25 to 30 minutes, or until slightly thickened. Pour into a serving bowl and top with cheese; serve with chips; serve warm.

Note:
You can make this ahead of time, without adding the cheese. Just cover and store it in the refrigerator for up to 3 days. Just before serving, top with the cheese.
