  • 2 packages (10 ounces each) frozen chopped broccoli
  • 1 cup Bisquick baking mix
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 cup shredded Cheddar cheese
  • (about 4 ounces)

Step 1

Heat oven to 325 degrees. Butter 5 1/2-cup souffle dish or 1 1/2-quart casserole. Cook broccoli as directed on package; drain. Beat baking mis, milk, eggs and salt with hand beater until smooth. Stir in broccoli and cheese. Pour into souffle dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately. 6 servings.

Corn Puff: Substitute 2 packages (10 ounces each) frozen corn for the broccoli.
Spinach Puff: Substitute 2 packages (10 ounces each) frozen chopped spinach for the broccoli.
