Ingredients
- 2 * 2 c water warm
- 7 * 7 handfuls ap flour
- * Make well
- * Add Tsp salt
- 2 * 2 eggs Mix eggs in well w/ hands
- * Add 1 c water to well

Preparation
Step 1
* Knead 15 min until smooth..Adding tiny bit of water to dough if needed
* Cut in ½ make 2 round rolls cover in plastic
Dough ready when press finger into dough pops back up
Let rest 10-15 min
Rolling 1/8 inch
Slice across into strips
2 Strips laid on top of each other. Slice into very small thin strips
Cover dough w/ cloth to keep from drying out
Roll Cavatelli using two fingers
