  • 4 strips thick sliced bacon, diced
  • Combine:
  • 1 stick unsalted butter, softened
  • 2 Tbsp crumbled blue cheese
  • 2 Tbsp minced shallots
  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp minced walnuts
  • 1/2 tsp lemon zest
  • 1/2 tsp Worchestershire sauce
  • Salt and pepper to taste

Step 1

Cook bacon in a skillet until crisp. Transfer bacon to a paper towel lined plate and reserve 1 Tbsp drippings. Once cool, finely chop bacon.

Combine butter, reserve drippings, blue cheese, shallots, parsley, walnuts, zest, and Worchestershire; season with salt and pepper.

Mound butter mixture onto a piece of plastic wrap. Roll plastic wrap around butter to form a tight cylinder, then tightly twist ends of plastic wrap. Freeze butter until firm, 30 minutes.

Sprinkle bacon on top of the butter once placed onto steaks.
