Ingredients

  • 2 Large Egg whites
  • 1/3 C Pure Maple Syrup
  • 3 Tbsp Orange Juice
  • 1 C Skim Milk
  • 1 Tbsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/8 tsp Ground Allspice, Cloves & Nutmeg
  • 1 Tbsp Orange Zest
  • 1 1/2 Rolled Oats~ NOT quick cooking variety
  • 1 C Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1/4 C Dried Cranberries & Chopped Pecans

Preparation

Step 1

Preheat oven to 350` Spray a 12 muffin tin 3 times with vegetable oil. Put the egg whites in a large mixing bowl & whisk until frothy. Whisk in the maple syrup, orange juice & milk. Add the vanilla, cinnamon, allspice, cloves, nutmeg & orange zest. Whisk to blend. Stir in the oats, flour & baking powder with a wooden spoon. Fold in the pecans & dried cranberries. Fill the muffin tin with the batter, approx 2/3 full. Bake for 20 minutes. IF want to make mini muffins, prepare a 24 muffin tin & bake for 12 minutes.
