Ingredients

  • 3 C Carrots, grated
  • 2 C Flour
  • 2 C Sugar
  • 2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 4 Eggs-well beaten
  • 1/2 C Butter-softened ( 1 stick )
  • 1/2 C Oil

Preparation

Step 1

Mix together flour, sugar, baking soda, baking powder, salt & cinnamon. In a large mixing bowl, beat eggs, add butter & oil-mix well. Add the grated carrots to this and mix well. Add the dry ingredients, mix well. Spoon into a greased 10 x 13 jelly roll pan. Bake at 350` for 45 minutes to 1 hour. Cool and frost with Cream Cheese Frosting. Freezes well.
