Ingredients
- 3 eggs
- 1 C salad oil
- 2 C sugar
- 2 tsp. vanilla
- 2 C shredded zucchini
- 1 – 8 1/2 oz. can crushed pineapple, drained
- 3 C flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 C raisins & nuts

Preparation
Step 1
Beat eggs and blend in oil, sugar and vanilla. Beat until thick and foamy. With spoon stir in zucchini and pineapple; set aside. Combine flour, soda, salt, baking powder, cinnamon and nutmeg. Stir dry ingredients into wet ingredients. Fold in raisins and nuts. Bake at 350°.
