Ingredients

  • 1 1/4

    cups all-purpose flour

  • 1 1/4

    cups whole wheat flour

  • 1

    tsp. baking powder

  • 1/2

    tsp. baking soda

  • 1/2

    tsp. salt

  • 1/3

    cup packed brown sugar

  • 1/2

    cup butter (1 stick)

  • 1/3

    cup unsweetened coconut milk

  • 2

    Tbsp. honey

  • 2

    Tbsp. molasses

  • 1/2

    tsp. coconut extract or vanilla

Directions

1. Combine the dry ingredients in a large bowl; set aside. In a medium saucepan, warm the butter, coconut milk, honey, and molasses just until butter melts; stir to combine. Add coconut extract. 2. Pour milk mixture all at once into flour mixture. Using a fork, stir until mixture is gathered into a ball. Turn dough out onto a lightly floured surface and knead gently, folding and pressing dough 12 to 15 strokes. Divide dough into smaller pieces; roll each piece between 2 pieces of parchment or waxed paper to 1/8-inch thickness. 3. Cut with a 2 1/2-inch round cookie cutter and transfer to an ungreased baking sheet. Bake in a 350° oven for 10 minutes. Makes about 40 crackers.
