Beef Salad with Pepper Dressing

For some unknown reason, this is the salad that I like to serve on Derby Day.

Ingredients

  • 1/2 c soy sauce
  • 6 T sugar
  • 1 T finely grated ginger
  • 1 T minced garlic
  • 1 12-oz New York steak, 1" thick
  • 8 c mixed greens
  • 1/4 English hothouse cucumber, cut julienne
  • 1 1/3 c thinly slice red onion
  • 1/4 c soy sauce
  • 2 T fresh lemon juice
  • 1/4 t minced jalapeno
  • 2 T peanut oil
  • 2 T olive oil
  • dash sesame oil (optional)
  • dash agave nectar (optional - to taste)
  • minced garlic (optional)
  • Cilantro

Preparation

Step 1

Combine first 4 ingredients n a baking dish; stir to dissolve sugar. Add steak, turning to coat. Cover and refrigerate 2 hours, turning occasionally.

Prepare BBQ grill (high heat). Combine greens, cucumber, and onion on large bowl. Combine 1/4 c soy sauce, lemon juice, and chili in a small bowl. Gradually whisk in both oils.

Grill steak until cooked to desired doneness, about 3 minutes per side for rare. Toss salad with vinaigrette. Divide salad among plates. Slice steak thinly across the grain. Arrange atop salad. Sprinkle with sesame seeds. Garnish with cilantro and serve.
