Mashed Potatoes With Cream Cheese and Chives 0 Picture

Ingredients

  • 3 lb. Yukon gold potatoes, peeled and quartered
  • 2/3 cup heavy cream
  • 1 tsp. salt
  • 2 tsp. pepper
  • 2/3 cup(5 oz.) cream cheese
  • 1/3 cup grated sharp chedder cheese
  • 3 Tblsp. fresh chives, chopped

Preparation

Step 1


Place potatoes in a large pot, and cover with water; bring to a boil. Reduce heat and simmer for 10 minutes or until tender. Drain. Return potatoes to pot; add the cream, salt and pepper.

Mash the potato mixture with a potato masher to desired consistency. Add the cheeses and chives; stir just until blended. Taste and add salt and pepper if needed.
