Ingredients
- 1 1/2 lbs mahi mahi fillets
- Kosher salt
- 1 tbsp chile powder
- Juice of 1 lime
- 2 oranges, 1 juiced, 1 halved and sliced
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 3 scallions, roughly chopped
- 2 tsp apple cider vinegar
- 1 tsp packed brown sugar
- 8 sprigs thyme
- 6 bay leaves
- Corn tortillas and toppings (avocado)

Step 1
Put a large piece of aluminum foil on a baking sheet. Arrange the fish side by side and sprinkle with salt.
Combine chile powder, lime juice, orange juice, oregano, cumin, scallions, vinegar and brown sugar in a blender; pulse until smooth. Pour the mixture over the fish, turning to coat with tongs. Scatter thyme and bay leaves over the fish, then top with orange slices. Cover with another piece of foil and tightly seal. Marinate 1-4 hours.
Position a rack in the oven and preheat to 475 degrees. Transfer fish to oven and bake until tender, 25 mins. Remove herbs and orange slices. Serve fish in tortillas with assorted toppings.
