  • 4 bananas broken into chunks and frozen
  • 2-3 T pure vanilla extract
  • 1/4 to 3/4 cup coconut or almond milk
  • 1 T coconut oil
  • 1/2 T pure maple syrup
  • dash of sea salt
  • 5-6 T almond flour

Preparation

Step 1

Peel your bananas, break into chunks, and freeze. Once they are frozen, get out your food processor and add the frozen bananas, 2 T vanilla extract, and 1/4 cup of milk of choice. Start your food processor. This takes time, so be patient! You may need to open the food processor and push the ingredients down to mix.. You can add more milk if you like a “soft serve” type ice cream. Keep blending until completely smooth. Try the ice cream. If you like a stronger vanilla flavor add one more T of vanilla extract.

For the sugar cookie bites, melt the coconut oil in a small glass dish for 30 seconds. Add the maple syrup and stir. Now add the 5 T almond flour and dash of salt, stirring as you go. It should resemble cookie dough.. If you need another T almond flour add it. Scoop your ice cream in a dish and crumble sugar cookie dough on top. Enjoy!
