Ingredients
- Syrup:
- 1 gallon cucumbers, unpeeled, sliced
- paper thin
- 2 bell peppers, sliced into fine shreds
- 8 small onions, sliced paper thin
- 1/2 c. salt
- 8 c. ice cubes
- 1-1/2 tsp. turmeric
- 5 c. sugar
- 2 Tbsp. mustard seeds
- 1/2 tsp. ground cloves
- 1 tsp. celery seed
- 5 c. vinegar

Preparation
Step 1
Combine cucumbers, peppers, onions, salt and ice in a large dutch oven. Place a dinner plate over the mixture and weight down. Let sit 3 hours. Drain thoroughly.
Combine syrup ingredients and pour over cucumber mixture. Cook over slow heat, stirring occasionally. Heat to scalding, but don't boil. Remove from heat and ladle into quart jars that have been sterilized in the dishwasher. Seal immediately.
