  • 6 corn tortilla
  • 6 tablespoons of fat free refried beans
  • 1 cup leftover ground beef
  • 1 cup baby spinach
  • 1/2 cup homemade or store bought salsa
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Heat fryer to 350 degrees. Microwave corn tortillas so that they are pliable.

For each taquito: spread 1 tablespoon refried beans on the bottom, top with 2 tablespoons of beef, a few pieces of spinach, then top with salsa and cheese.

Carefully roll and use a toothpick to hold the taquito together. Don't worry you can fry with the toothpick in the taquito and just remove it when it comes out of the fryer. These only take about 3-4 minutes to cook.

Top with more salsa and cilantro. Enjoy!
