Ingredients

  • 3 Pounds small red potatoes
  • 1/2 Cup Chopped fresh or frozen chives
  • 1 Tablespoon grated onion
  • 1 Teaspoon sugar
  • 1 Teaspoon salt
  • 1/2 Teaspoon ground white pepper
  • 1/2 Cup sour cream
  • 1/2 Cup plain low-fat yogurt
  • 2 to 3 Tablespoons mayonnaise
  • 2 Teaspoons lemon juice
  • 2 Teaspoons Dijon mustard
  • Radicchio leaves

Preparation

Step 1

Cook potatoes in boiling water to cover 30 minutes or until tender. Drain and cool slightly. Peel potatoes; cut into thin slices.

Combine chives and next 9 ingredients in a large bowl; add potato slices, tossing gently to coat. Cover and chill 2 to 3 hours. Serve on radicchio leaves; garnish, if desired.

Yield: 10 servings.
