Ingredients
- 1 1/2 cups egg whites, about 12
- 1 1/4 tsp cream of tartar
- 1/3 tsp salt
- 1 3/4 cup granulated sugar
- 4 or 5 tbsp cocoa
- 1 cup cake flour
- 1 1/4 tsp vanilla

Step 1
Beat egg whites with flat whip. Add in tartar and salt. Continue beating until whites will just hold a point when the whip is pulled out - not stiff. Sift sugar twice and sift cocoa with 1 cup of sugar. Gently beat and fold in sugar and cocoa. Sift flour before folding in.
