Apple Cake with Butter Sauce

Apples make a wonderful and moist spiced cake, but we think it is the
delicious butter sauce that makes this cake stand out. We found ourselves serving the butter sauce with other desserts we were testing that day. It is a very good ice cream topping.

- CAKE
- 4 cups baking apples, peeled,
- cored and diced
- 2 cups sugar, divided
- 1 cup chopped pecans, optional
- 1/2 cup butter or margarine, softened
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- granulated sugar
- BUTTER SAUCE
- 3/4 cup butter
- 1 1/2 cups sugar
- 1 1/2 teaspoons vanilla
- 3/4 cup evaporated milk

Preparation
Step 1
Spray a 9 x 13-inch baking pan with non-stick spray. Set aside.
Mix apples with 1 cup sugar and pecans, if used. Set aside.
With an electric mixer on medium speed, beat 1 cup sugar and butter until light and fluffy.
Add eggs and vanilla and mix well. Sift flour, cinnamon, salt, nutmeg,
baking soda and baking powder. Add sifted ingredients to cake mixture.
Mix apples and nut mixture into batter and pour into the prepared baking pan.
Bake at 350 degrees for 20 minutes.
Reduce temperature to 3250 and bake an additional 20 minutes or until
cake tests done. Remove cake from oven and sprinkle with granulated
sugar. Place on a wire rack to cool.
In a small saucepan, melt butter. Add sugar, vanilla and evaporated milk .
Stirring constantly, cook until mixture thickens slightly. Do not allow to
boil.
To serve, pour warm sauce over apple cake and top with a dollop of
whipped topping, if desired.
Refrigerate leftover sauce.
