Ingredients
- 2 tbsp vegetable oil
- 3 small Yellow beets, quartered
- 1 medium yellow onion, coarsely chopped
- 1 medium carrot, cut into chunks
- salt and fresh pepper, to taste
- 1 cup millet
- 1/2 cup peanuts
- 4 garlic cloves, peeled and minced
- 1/2 cup toasted wheat germ
- 2 slices whole wheat bread, lightly toasted and torn into pieces
- 1 Tbsp blue cheese crumbles

Preparation
Step 1
Preheat oven to 375 degrees F. Combine first 5 ingredients and place in oven on a sheet tray. Cook until beets are tender.
Bring 2.5 cups water to a boil and stir in a pinch of salt and 1 cup millet. Cover, reduce the heat to a simmer, and cook for 20, or until water is absorbed. Fluff the grains with a fork, spoon into a large bowl and allow it to cool for a few minutes.
Combine the peanuts, garlic, wheat germ, and bread pieces in a food processor and pulse until everything is finely chopped. Add to the millet mixture. Mix everything well and season with salt and pepper. Refrigerate for 1 hour.
Form mixture into patties and fry in a hot pan with a touch of oil. Cook until both sides are golden brown. Serve on buns with blue cheese.
