Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup sifted all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs, separated
  • 2 tsp lemon rind
  • 1/4 cup lemon juice
  • 2 tsp melted butter
  • 1 1/2 cups milk

Step 1

Sift 1 cup of the sugar with the flour, baking powder, and salt. Whip egg yolks until thick and lemon-colored; add lemon rind, juice, butter and milk. Beat thoroughly. Stir in flour mixture and beat until smooth. Whip egg whites until soft peaks form. Add remaining 1/2 cup sugar and whip to stiff peaks. Fold into flour mixture.
Pour into a buttered 2-quart casserole. Set in a pan containing 1/2 inch hot water. Bake about 45 minutes at 350° until firm.
