Ingredients
- 3 cups rhubarb stalks, chopped
- 2 cups strawberries, hulled and chopped
- 1 teaspoon vanilla
- 1/2 teaspoon liquid stevia
- 1/2 teaspoon ground cinnamon
- 1/2 large avocado
- Small handful of ice
- Raw mixed nuts, chopped (optional)

Preparation
Step 1
In a large stockpot combine the rhubarb, strawberries, vanilla, stevia, and cinnamon. Cover the pot with a lid and bring to a simmer over medium heat. Allow the strawberries to soften and release their juice. Cook for 8-10 minutes.
Mash the fruit into a sauce and remove the pot from the heat. Store the sauce in the refrigerator until ready to use.
To make the smoothie add 1 cup of strawberry rhubarb sauce, half an avocado, and a handful of ice to a blender. Puree until smooth. Pour into a large glass and top with chopped nuts.
