Aggie Brisket (Treebeards)

We affectionately named this Aggie Brisket after a friend of Treebeards
who sent this recipe from Texas A&M. We never would have guessed the
secret to his melt-in-the-mouth brisket is slowly cooking it in strong
brewed coffee because there is not a trace of coffee flavor. The drippings can be served as is or thickened and seasoned to make gravy.

- 4 pounds brisket, trimmed of visible fat
- salt
- garlic powder
- coarsely ground black pepper
- lemon pepper
- 5 cups cold strong brewed coffee
- 12 small new potatoes
- 4 carrots, quartered
- 2 onions, quartered and separated

Preparation
Step 1
Sprinkle spices over both sides of trimmed brisket and rub spices into
meat.
In a baking pan lined with heavy-duty aluminum foil, place brisket. Fold foil to fonn a pouch. Pour coffee over brisket and seal foil.
Bake at 2500 for 812 hours.
Remove brisket from oven and open pouch. Add vegetables and reseal
pouch. Return to oven and cook 112 hours or until vegetables are tender.
To serve, cut brisket in thin diagonal slices across the grain.
Serves 8.
A little trivia:
An Aggie is someone who attends an agricultural college. The Morrell
Land grant of 1865 established A&M (Agricultural and Mechanical)
Colleges throughout the country. Many of them are referred to as
"Aggies" in reference to the agricultural part.
