Ingredients

  • 1/2 lb. ground beef
  • 1 tbsp. baking soda
  • 2 lbs. russet potatoes
  • 1/2 cup milk
  • 4 tbsp. butter
  • 1 tbsp. tomato paste
  • 2 tsp. garlic, minced
  • 2 carrots, chopped small cubes
  • 1 cup crimini mushrooms, chopped
  • 1/4 cup scallions, chopped thinly
  • 1/2 cup beef stock
  • salt and pepper

Step 1

Add baking soda to ground beef to tenderize it. Let stand for half hour.

Peel potatoes. Chop in large cubes. Place potatoes in large pot and cover completely with water. Bring to a boil. Cook until you can pierce the center of a cube and there is no resistance. Drain water. Bring potatoes back to the pot. Mash it. Add milk, butter, and salt and pepper. Cook for a few more minutes, stir in scallions and remove from stove.

Heat olive oil in a large pan. Saute mushrooms. Stir in tomato paste. Add chopped carrots. Add stock and cook until carrots are tender. Add the beef. Season mixture. Transfer to a baking pan.

Add mashed potatoes on top of the beef. Use a fork to rake the top of the potatoes and create a wavy pattern.

Place pan in the broiler and broil for a few minutes until mashed potatoes are golden.
