Fresh Apple Cake (Treebeards Cookbook)

This great cake is easy to make and golden raisins give it a distinct flavor. It's equally as good served cold or warm, as a breakfast cake or after dinner. We also like this served with the butter sauce.

Ingredients
- 3 cups baking apples, peeled, cored and diced
- 2 cups granulated sugar
- 2 teaspoons cinnamon
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoons salt
- 2 eggs, beaten
- 1 cup vegetable oil
- 2 teaspoons vanilla
- 1 cup golden raisins
- Granulated sugar

Preparation
Step 1
In a large bowl with wooden spoon toss diced apples with sugar and cinnamon. Add flour, baking soda and salt. Stir to mix. Add beaten eggs, oil, and vanilla; mix well. Fold in golden raisins.
Spread into ungreased 9 X 13-inch cake pan. Bake 350º for 40 to 45 minutes or until cake tests done. Remove cake from oven and sprinkle with sugar.
Serve warm or cold. Serve with ice cream, or whipped cream, if desired.
Serves 15 to 18.
