I have a quick and easy cookie recipe for you. This is one that I have been making for the kids lately (well, and also me too!) because it is nut free (so they can actually take it to school) and totally delicious. Coconut Blueberry Cookies. Perfect. Please try!!

Ingredients
- 1 cup butter, softened
- 1 1/4 cups white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 cups oats
- 2 cups shredded unsweetened coconut
- 2 cups dried blueberries

Step 1
1. Preheat the oven to 350 degrees.
2. In the bowl of a standing mixer, cream together the butter and sugar until fluffy.
3. Add the eggs and the vanilla and beat until creamy.
4. In a separate bowl combine the flour, baking soda, nutmeg and salt and add it to the batter.
5. Then mix in the oats, coconut and dried blueberries until everything is well combined.
6. Scoop the cookie dough onto silpat lined sheet pans by the spoonful and bake them 10 minutes at 350 degrees until golden.
7. Let cool and keep in an airtight container until ready to serve.
