Ingredients
- Honey Pecan Butter:
- 1/2 cup butter, softened
- 1/4 cup honey
- 1/3 cup chopped pecans, toasted
- Hotcakes:
- 1 cup all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/8 tsp. ground cinnamon
- 1 egg
- 1 cup milk
- 1 cup mashed banana (about 2 medium)
- 3 Tbsp. vegetable oil
- 2 tsp. lemon juice
- Maple Syrup (optional)

Step 1
Beat butter & honey in a small mixing bowl until smooth. Stir in pecans and set aside. Combine flour, sugar, baking powder, salt & cinnamon in a large bowl. In a small bowl, whisk the egg, milk, bananas, oil and lemon juice; stir into the dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a hot griddle. Turn when bubbles form on top & cook until second side is brown. Serve with honey pecan butter and syrup, if desired.
