Everyone loves these gooey cupcakes! The recipe came from Emily Newton, my Stephens College roommate who I met in 1959.

Ingredients

  • Combine:
  • 8 oz. Crm. Cheese
  • 1 egg
  • 1/8 tsp. Salt
  • In another bowl mix:
  • 1 1/2 c. Flour
  • 1 c. Sugar
  • 1 tsp. Soda
  • 1/2 tsp. Salt
  • 1/4 c. Cocoa
  • Add:
  • 1 c. Water
  • 1/3 c. Oil
  • 1 tsp. Vanilla
  • Walnuts

Step 1

Combine: cream cheese, egg and 1/8 t of salt,beat well till smooth-then stir in Chocolate chips and Butterscotch chips. In another bowl mix dry ingredients and add water, oil and vanilla, beat together till well mixed. Line muffin tins with baking cups, fill 1/3 full with chocolate batter – Top each with heaping tsp of cream cheese mixture. Sprinkle walnuts on top. Bake 350 degree 25-30 minutes makes 16-17 cupcakes.
