Chicken & Wild Rice Casserole

Ingredients
- 1 cup wild rice, cooked
- 1/2 cup onion, chopped
- 1/2 cup butter
- 1/4 cup flour
- 10 oz can sliced mushrooms
- 1 cup chicken broth
- 1 1/2 cups light cream
- 3 cups chicken, cooked and diced
- 1/4 cup pimento, diced
- 2 tb parsley, snipped
- 1 1/2 tsp pepper
- 1/2 cup almonds, slivered

Preparation
Step 1
1) Cook onion in butter until tender but not brown. Remove from heat and stir in flour. Drain mushrooms, reserving liquid. Add chicken broth to mushroom liquid to measure 1 1/2 cups. Gradually add to flour mixture. Add cream, cook and stir until thick. Add cooked wild rice, mushrooms, chicken, pimento, parsley, salt and pepper. Place in 2 quart casserole, sprinkle with almonds. Bake at 350 for 30 minutes.
