This is the recipe for those delightful little cakes served to us by Mike & Roselyn at the RR Thompson House, during our wine trip to Willamette Valley, OR.

Ingredients
- 2 c flour (1 c)
- 1/2 c sugar (1/8 c sugar, 1/8 c Splenda)
- 1 t baking powder (1/2)
- 1/4 t salt (1/8)
- 1/4 c butter (2 T)
- 4 T shortening (2 T [butter] shortening)
- 1/2 c currants (1/4 c)
- 1/3 c milk (splash cream, 2 T milk, more as needed)
- 1/2 orange zest, optional

Step 1
Mix dry ingredients. Put about half of the dry mixture into the small processor. Add the diced butter and whirl. Add the cut shortening and whirl. Add to the remaining dry ingredients and mix. Add the currants, orange zest, and milk. Make a dough. Gently knead and roll to 1/2" thickness. Use a 2" or 2 1/4" cutter to cut the cakes.
Heat griddle or non-stick skillet over medium heat; melt an additional 1 T of shortening. Cook cakes 3 to 4 minutes per side, or until lightly browned. (I covered them with a lid to help get them done inside.)
They don't need toppings, but: butter; mascarpone or clotted cream w/ red raspberry jam; orange marmalade.
