- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1 cup milk
- Parmesan
- Nutmeg
- Sherry
- White pepper

Step 1
In 1 qt. Glass measure place butter, flour and salt microwave at high (10) 2 minutes stirring after 1 minute. Gradually stir in milk. Microwave at high (10) 3 ½ to 4 ½ minutes, stirring every minute until thick and bubbly. For thick sauce, use 3 tablespoons flour instead of 2 tablespoons. Cheese sauce variation: add 2 cups (8 – oz) shredded sharp cheese and a dash of cayenne pepper to white sauce. Stir to melt cheese after microwaving as above.
This can also be made on the stove.
