Ingredients

  • Carcass from any size turkey
  • 3-4 ribs of celery
  • 1 large onion chopped
  • 1/2 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 quarts water
  • 1/2 to 1 cup uncooked barley

Step 1

Break carcass in half through the backbone and place in a large soup kettle. Add celery, onion, parsley, salt, pepper and water and bring to a boil. Lower heat and simmer, covered, for 3 to 4 hours, stirring occasionally.

Remove from heat and cool to room temperature. Remove bones, gristle and other debris from broth. Bring broth to a boil. Stir in barley, lower heat and simmer about 30 minutes, until barley is tender. Egg noodles can be substituted for barley.
