Ingredients

  • 1 lb lean ground beef
  • 1 Tbsp southwestern seasoning
  • 1/2 C. salsa
  • 1/2 C. water
  • 1 10 oz. can enchilada sauce
  • 12 corn tortillas
  • 1 C. shredded colby jack cheese
  • 4 Tbsp snipped cilantro

Preparation

Step 1

Brown ground beef in skillet with southwestern seasoning. Add water, salsa and enchilada sauce. While beef is cooking, cut flour tortillas into 1" pieces. Spread half the tortilla pieces in bottom of deep dish baker. Cover with half the meat mixture, half the cheese, and half the cilantro. Repeat the layers, leaving the cilantro off the top. Heat in microwave on high for 4 -5 minutes until hot and cheese is melted. Sprinkle with remaining cilantro. May serve with sour cream (not in calorie count)
