Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 stick (8 Tbsp) butter, melted
  • 1 cup buttermilk
  • 1 large egg

Preparation

Step 1

1. Preheat the oven to 400°F. Butter a muffin tin or drop a cupcake paper into each of the tin’s openings.

2. Put all the dry ingredients into a mixing bowl and whisk to blend. Put all the wet ingredients into another bowl and whisk to blend. Pour the wet ingredients over the dry and mix together, stirring only until everything is moistened. (It’s OK if there are a few lumps.) Then spoon the batter into the muffin cups.

3. Bake 15 to 20 minutes, or until the muffins are golden and a knife inserted into the center comes out clean. Cool 5 minutes before unmolding. Serve the muffins warm or at room temperature.
