Ingredients
- Trader Joe's 17 Bean and Barley Mix - 1 - 16 oz bag
- Imagine Organic Vegetable Broth Low Sodium, 2-32 oz containers - (this brand is creamy delicious)
- 1 Tbs Olive Oil
- 1 cup Onions, chopped
- 1 cup Green Peppers chopped
- 1 cup Celery, diced
- 1 cup Carrots, chopped
- 1 tsp dried basil
- 5 cloves of garlic, minced
- 1 bay leaf
- 1/2 tsp Italian seasoning
- salt and pepper to taste
- 14 oz can diced tomatoes, low or no salt

Step 1
Prepare beans by soaking over night or bringing to a boil with 3 times as much water as beans. Let soak 1 hr, then drain. Add the broth and bring to a boil, then simmer.
Saute veggies, basil and garlic in oil until soft. Don't burn the garlic! Add mixture and remaining ingredients to simmering beans. Simmer for 1 hour or until tender.
Throw in some chopped chicken if you have some meat eaters in the family.
Makes 16 -1 cup servings -Plenty!
If you can't find the Trader Joe's bean mix, most stores will have a 15 bean dried mix.
If you want to decrease the calories a little more, add more broth.
