Ingredients

  • 1 cup macadamia nuts
  • 2 tbs unsweetened coconut flakes
  • 2 tbs Smart Source margarine
  • 1 1/2 tsp Ener-G Egg Replacer plus 1 tbs water (equals one egg yolk
  • 2 tbs brown rice flour
  • 2 tbs sweet rice flour
  • ( if using gluten free flour mix, just substitute 4 tablespoons mix for the flours)
  • 2 tbs sugar
  • 1/2 tsp xanthum gum

Preparation

Step 1

1. Preheat oven to 350° F. Prepare tart pans by spraying with original Pam not Pam baking spray (which contains gluten).
2. Using a food processor add macadamia nuts, unsweetened coconut flakes, Smart Source margarine, Ener-g Egg Replacer mixed as directed, brown rice flour, sweet rice flour, sugar and xantham gum.
3. Pulse the ingredients together until it balls up. Gently pat into prepared pans.
4. Bake for 15-20 minutes, until firm. Let cool before filling.
