Meat Loaf Dinner for 2
By Addie
I ESPECIALLY like this recipe because it makes a nice meal for two without lots of leftovers. The pork gives this meat loaf a moist, tasty, old-fashioned flavor—it's one of our favorite main dishes. —Kim McMurl Fargo, North Dakota (Taste of Home)

1 cup boiling water
3 eggs
2 green onions, sliced

MACARONI AND CHEESE FOR TWO
THIS IS one of those dishes that our family calls "a Mama recipe". My mother rarely consulted a cookbook, so when asked for a recipe, she could only estimate. I've worked out the ingredients to make it for two, but it can easily by doubled. It's simply a good, wholesome dish most folks seem to enjoy. —Betty Allen East Point, Georgia
1 1/2 cups cooked elbow macaroni
1 cup (4 ounces) shredded sharp cheddar cheese
1/2 cup milk
1 egg, lightly beaten
1/2 teaspoon salt
1 tablespoon butter
In a medium bowl, combine macaroni, cheese, milk, egg and salt; mix well. Pour into a greased 1-qt. shallow baking dish; dot with butter. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Yield: 2 servings.

PEANUT BUTTER PARFAITS FOR TWO
NOW THAT our nest holds only two of us, I've had to develop many dishes for two. My husband and I love this dessert, and it also makes an elegant finish to a meal when company comes. You'll hear lots of "oohs" and "aahs"! —Mildred Sherrer Bay City, Texas
1/2 cup packed light brown sugar
3 tablespoons milk
2 tablespoons light corn syrup
2 teaspoons butter
2 tablespoons creamy peanut butter
