Ingredients
- 1 large bell pepper (2 cups)
- 1/3 - 12 c hot peppers
- 5 c sugar
- 1 c vinegar
- 1 pkg surejel (pectin)

Preparation
Step 1
Finely chop or puree peppers
Put vinegar and peppers in boiler add surejel, bring to a boil, a full rolling boil that does not stop when stirred, stir constantly. Stir in sugar quickly, return to full rolling boil, boil 1 minute. Add food coloring, if desired. Remove from heat, carefully scim off foam. Put in jars.
Jimmie used 6 1/2 cups sugar!
