Ingredients

  • 3 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon cloves
  • 1 teaspoon nutmeg
  • 1 1/2 cups chopped pecans
  • 2 1/2 cups chopped figs
  • 2 teaspoons vanilla
  • 1 cup oil
  • 2 teaspoons rum flavoring
  • 3 eggs
  • 3 cups sugar

Preparation

Step 1

Blend together flour, baking powder, soda, spices and pecans.
Mix together figs, vanilla, oil, flavoring and eggs. Add sugar and stir until syrupy. Add to dry ingredients. Add more flour if needed.
Grease and flour 3 loaf pans or clean coffee cans. Divide batter equally between pans. Bake at 350 degrees until firm, about 1 hour.
