Ingredients
- 4 medium onions
- 4 Tbs. Butter
- 1 Tbs. flour
- 6 cups beef stock

Step 1
We usually boil some brisket or chuck for tacos and then use the broth from that.
Saute onions in butter until brown, add flour and then brown lightly. Add the stock and simmer for 30-40 minutes. Place toasted or stale bread in boottom of bowl, add shredded cheese and pour soup over all, Can add more cheese and broil.
Dad makes a lighter type , using chicken broth instead of beef and adding a small cut up potato and more seasoning, heavy on pepper and garlic.
Rick likes to cook the onions very low for an 4-5 hours
and make homemade beef stock if you have time.
