Ingredients

  • 1 cup white rice
  • 1 1/2 tablespoons olive oil
  • 1 small yellow onion, thinly sliced
  • 2 tablespoons curry powder
  • 1 cup plain yogurt
  • 3/4 cup heavy cream
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 14.5-ounce can diced tomatoes, drained (optional)
  • Meat from 1 rotisserie chicken, sliced or shredded NOTE: Cut or shred into bite sized pieces. Leave out the skins.
  • 1/4 cup fresh cilantro leaves, roughly chopped

Step 1

1. Cook the rice according to the package directions.

2. Heat the oil in a skillet over medium-low heat. Add the onion and cook, stirring occasionally, for 7 minutes.

3. Sprinkle with the curry powder and cook, stirring, for 1 minute.

4. Add the yogurt and cream and simmer gently for 3 minutes. Stir in the salt, cayenne pepper, paprika and tomatoes (if desired). Adjust seasonings to taste.

5. Stir in enough chicken to fill the pan. Remove from heat. Sprinkle each serving with cilantro.

Great recipe, and I recommend doubling the sauce ingredients, adding cayenne & extra curry, as others mention. You can never have too much sauce to dip your Naan bread and soak your rice. Will have to try the spicy tomatoes, thanks for the idea!

Very easy, tasty recipe. Had a can of diced tomatoes with jalapeno peppers on hand and THIS really gave the recipe some zip. Will definitely make again and will continue to use the spicy tomatoes.

This WAS quick/easy because I chopped uncooked, BLSL chicken (thighs) and sauteed with the onions, etc. Like others suggested I put more curry powder than suggested (1-2 Tbs.). I also used half/half in place of cream and it was plenty creamy and rich. NEXT TIME, my husband and I agreed it need something sweet/tangy added to it(I did not put in the tomoatoes), so I will likely add dried apricots (sauteed with chicken, etc) or golden raisins.

My husband made this for us last night and it was tasty. It wasn't that quick though as it took a good bit of time to get the chicken off the bone. I thought the curry amount could definitely be increased.

This is so easy and delicious. I also used coconut milk (increased to almost 1 cup) in place of the milk and used frozen peas instead of the tomatoes (i am the only person out of 6 that likes them). Very rich and creamy - not too spicy. My husband and I adjusted the spices to our liking after it was cooked. This recipe is definitely going in my 'keeper' file.

I really enjoyed this recipe - it's cheap, easy and delicious! However, like the other commenters have mentioned that it can be bland if you just stick with the recipe. I say instead of using heavy cream, use coconut milk, add a bay leaf, a ton more curry powder, and paprika for that extra spice and flavor. I also added potatoes and peas to give some more depth to this dish. I enjoyed this dish and will continue to make it and probably expand some more on the original recipe!

This was my first time making/eating curry and I was pleasantly surprised! I originally made it for my picky brother who enjoys spicy food, but this is very mild to a spice-hater like me, I can't stand spicy food! I added another 1/2 teaspoon of curry and season salt to taste, because, yes, there is some blandness (but not unfixable blandness) and used salsa instead of diced tomatoes. This recipe goes well with a smoothie on the side. Thanks! I will use this recipe again and again!

I thought this was awesome! I did not use the onion or tomatoes and my seven year old really liked it!

I love this recipe. Quick & easy. I added cayanne pepper to give it a kick since the curry I bought is a little bland. I also use onion powder instead of sauteing an onion to save time and since my husband does not like them. Tomatoes are a must :)

This is such a great recipe, very flavorful and easy. Instead of the heavy cream, I used skim milk and added arrowroot to thicken it to save on the calories. I also used low fat plain yogurt, which kind of curdled a little, but it didn't seem to matter. I added extra curry to my liking. I use the Frontier salt-free curry powder brand. I like this one a lot because it doesn't have as much cumin or cayenne in it.

Our family loves this. I usually cook my own chicken, chopping it in small pieces for the kids, then browning in olive oil with garlic salt and ground ginger and the onions. Then continue with the recipe. I find that the tomatos (petite diced) are not really optional. I agree that it is not spicy, but I don't believe it to be bland. I use greek yogurt, maybe this makes a difference. Also, curry is not really one spice, but a blend, so maybe it depends on the color/blend of curry you are using, but my husband, who is a very picky southern boy, liked this and has requested it. We eat it with brown or yellow rice and peas.

Really?! My family and I LOVE this recipe. We make it over and over and I always double the recipe so that we have plenty of leftovers. I follow the recipe exactly, including adding the optional drained diced tomatoes. We eat it poured on brown rice, scooped up with WFM's 365 brand whole wheat naan bread (toasted in a toaster oven until the surfaces are barely crisp and the inside chewy and warm). I have made many curries, and while this one is definitely mild compared to some, it is great. I had to register just so I could get on here and defend one of our favorites!!!

I agree that it was bland although my kids liked it that way. I will make it again for sure but will add some spice and other ingredients as suggested by other reviewers. I am going to start with garlic and more curry. I think we should call this recipe "Chicken Curry Lite" or "Intro to Chicken Curry"!

Yes, this is definitely bland if you follow the recipe. Here's what I did to add some flavor. Added 1-2 T of minced garlic, added a 1-2 inch piece of minced ginger root, twice as much curry powder as the recipe calls for. LESS cream, MORE yogurt (will produce a bit thicker sauce) and a larger onion. I also added peas after all other ingredients had some time to simmer together. I loved it so much I ate it for breakfast the following morning :)

Try it with Rotel instead of plain diced tomatoes - far from bland! It's also great with shrimp in place of chicken for a change. This is a great, simple base for lots of possibilities.

I agree that this dish is very bland. It's quick, but not one I will make again.

I did NOT enjoy this dish. We followed the recipe verbatim, and the end result was pretty bland. Tried adding some red pepper flakes to jazz it up, but the whole meal was a fail. In the future, I would use spicier curry and add some more exciting vegetables; maybe fresh mushrooms and more onions sauteed together.

This was a great dish and SO simple! Both my husband and 7-year-old son loved it. I also made a couple of adjustments to the original recipe by adding some frozen peas and sliced, fresh mushrooms. Many thanks!

Made this with quite a few changes. Cauliflower, edamame, butternut squash cooked in a little water with lots of curry powder. Added drained tomatoes, chicken, light coconut milk (3/4 cup) and cream (1/2 cup). Cooked uncovered until sauce was thick. Yum!

We love this curry. I have tried a few recipes that are a lot more complicated but this is the one my family actually likes so, hey, why would I go to the trouble??? I agree that the nutritional info is way off on this one! If I don't have a deli chicken, I saute some chicken breast in onion, garlic and curry spices. I think this would be too bland with plain chicken.

I love this recipe and it has quickly become a favorite that I make a couple of times a month. I sometimes put chopped banana's and peanuts on top for variety. Thanks for a great recipe!

This was dinner last night. After a long day, it was great to be able to pull together this dinner in less than 25 minutes. THANK YOU!! I ended up using Greek Plain Yogurt and it gave the dish a very interesting tang. I will definitely be adding this to my recipe box for future dinners.

Made this recipe tonight and it was delicious. My husband loved it and we will definitely be making it again. Made it exactly as written with the optional tomatoes. The yogurt makes the sauce taste rich but is deceptively healthy!

I remember when this was published years ago. I made this and LOVED it. I added golden raisins, and we set up a little "buffet" of other add-ons people could eat with it, including pineapple, coconut, cashews, and bananas (learned from friends who used to live in the Philippines and Laos). Yummy!!

Husband liked it/has asked that it be a do over... although I had to add at least double the amount of curry and also added cayenne as it was a bit bland.

I have used this recipe since it was in the magazine as a "Fake it don't make it". I add veggies, and in a pinch you can use sour cream instead of yogurt. In fact, I have grown to prefer it that way- it gives a nice texture!!!
