Dijon Vinegarette Asparagus

Ingredients

  • 2 lbs asparagus
  • 1/2 cup water
  • 1/4 cup balsamic vinegar
  • 1/4 cup walnuts
  • 1/2 cup raisins
  • 1 tsp dijon mustard
  • 2 garlic cloves,pressed
  • 2 Tbs chopped red onion
  • 2 Tbs pine nuts

Preparation

Step 1

Boil asparagus until crisp/tender in 1/2" water. Process rest of ingred.
Pour over asparagus and let stand 1-2 hrs before serving
