  • 1 lb cold lard (Crisco or any shortening)
  • 2 tsp salt
  • 1 egg
  • 11/2 tbsp vinegar (optional)
  • Cold water

Step 1

Mix together flour and salt in a large mixing bowl. Cut in lard with pastry cutter or two knives. Mix with fingertips until mixture is like coarse oatmeal. Beat egg in a 8 oz measuring cup, add vinegar and beat again. Add cold water to fill cup to 8 oz mark and beat thoroughly.

Make a well in flour mixture and pour in the liquid. Mix with fork until pastry holds together; it may be sticky. Press into ball, wrap and chill (1/2 hour at least) before rolling. Cut off the amount needed and refrigerate or freeze the rest.

Yields enough for 2-3 pies or many dozens of sausage rolls. Keeps for 1 week in refrigerator or many months in freezer.
