  • aromatics:
  • 1 red apple, sliced
  • 1/2 onion,sliced
  • 1 cinnamon stick, or ground
  • 1 cup water
  • 4 sprigs rosemary
  • 6 leaves sage
  • canola oil, not too much

Preparation

Step 1

after bird removed from brine at 10:30 AM,,preheat oven to 475 degrees!bring bird to room temp first for an hour or so. Put in oven at 11:30 or noon
combine the apple, onion,cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 mins.
place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to the cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola oil.
roast on lowest level of the oven at 475 degrees for 25 mins. Before removing from open, open windows, fan on high, and place floor fan to blow smoke out the windown. Remove from oven and cover breast with double layer of foil, return to oven reducing temp to 350 degrees. Cook until 155 degrees. Let turkey rest, loosely covered for 15 mins. before carving.
Takes about 3 hours plus 1/2 for roasting. Can rest it for 1 hr +
