Ingredients

  • 1 lb boneless chicken breast
  • 1 1/2 cups chopped green onions, divided
  • 1/4 cup fresh lime juice
  • 3 tbsp sugar
  • 1 garlic clove, minced
  • 2 tbsp fish sauce
  • 6 cups thinly sliced green cabbage
  • 1 cup matchstick carrots
  • 3/4 cup julienned cut red pepper
  • 3/4 cup " " yellow pepper
  • 1/2 cup dry roasted peanuts
  • 1/3 cup chopped fresh basil
  • 1/3 cup chopped fresh mint
  • 1/3 cup chopped fresh cilantro

Preparation

Step 1

Place chicken and 1/2 cup green onions in med saucepan, cover with water, bring to boil over med high heat, cover, reduce heat and simmer 5 min. Drain and let cool, discard onions, shred chicken. Combine juice, sugar and garlic in sm microwave safe bowl, cover with plastic wrap, microwave on high 20 seconds or until sugar melts, cool to room temp, add fish sauce. Combine all, let stand 5 min before serving...
