  • 1 large egg, lightly beaten

  • 1/2 cup(s) marshmallow creme

Preparation

Step 1

Prepare cakes: Preheat oven to 350 degrees F. Line 2 large cookie sheets with parchment paper.

In large bowl, whisk flour, sugar, cocoa, baking soda, and salt. With mixer on medium speed, beat in milk, oil, egg, and vanilla until smooth. Drop 1 measuring tablespoon batter onto prepared sheet. Repeat with remaining batter, spacing 2 inches apart (cakes will spread). Bake 8 to 10 minutes or until cakes spring back when lightly pressed. Cool completely on sheets on wire racks.

Prepare filling: With mixer on high speed, beat butter, confectioners' sugar, marshmallow creme, and vanilla until fluffy. Match up similar-size cake halves. Spread filling on flat side of half of cakes; sandwich with remaining cakes. Store whoopie pies in airtight container at room temperature up to 3 days.
