Mom's Glazed Coffee Squares

- 1/2 cup(s) brewed coffee
- 1/4 cup(s) raisins
- 2 tablespoon(s) molasses
- 1/2 cup(s) (1 stick) butter, at room temperature
- 3/4 cup(s) packed brown sugar
- 1 large egg
- 1.50 cup(s) all-purpose flour
- 3/4 teaspoon(s) ground cinnamon
- 1/2 teaspoon(s) baking soda
- 1/2 teaspoon(s) baking powder
- 1/2 teaspoon(s) salt
- 1/2 cup(s) chopped walnuts
- 1/2 teaspoon(s) vanilla extract
- 2 tablespoon(s) brewed coffee
- 1/2 teaspoon(s) butter, at room temperature
- 1 cup(s) confectioners' sugar

Step 1
Prepare cake: Preheat oven to 350 degrees F. Line 13- by 9-inch baking pan with parchment. In small saucepan on medium, simmer coffee, raisins, and molasses 10 minute or until raisins plump. Cool.
In large bowl, with mixer on medium speed, beat butter, brown sugar, and egg until light and fluffy, scraping bowl as needed. In medium bowl, whisk flour, cinnamon, baking soda, baking powder, and salt. Add to butter mixture and beat until just combined. With mixer on low speed, drizzle in raisin mixture and beat until blended. With spatula, stir in chopped walnuts.
Spread batter evenly in prepared pan using offset (angled) spatula. Bake 13 to 15 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan on wire rack.
Prepare glaze: In bowl, stir vanilla, coffee, butter, and confectioners' sugar until smooth. Spread over warm cake. Let stand until set. Cut into 12 squares. Store in airtight container at room temperature up to 3 days.
