Ingredients

  • 5 or 6 potatoes, cooked and mashed
  • 1 box salt cod (soaked overnight)
  • 1 onion minced
  • 1 stick butter
  • salt and pepper to taste
  • 1/2 tube Ritz crackers, finely ground
  • 1-2 eggs, beaten

Step 1

Cook the cod in fresh water until flaky. Drain and shred.

Mix fish with the potatoes, onion, butter, salt and pepper. Form patties. Brush the patties with the egg. Roll in the cracker crumbs, set aside.

Fry the patties in butter or butter and olive oil until browned on both sides.

Serve with baked beans.
