  • 2 c Bisquick
  • 1/2 c flour
  • 1 c milk
  • 1/2 c heavy cream
  • 4 eggs
  • salt/pepper
  • 2 tsp baking powder
  • 2 tsp olive oil
  • Cardoons, cleaned and boiled cut into 4 inch pieces

Step 1

Beat the eggs. Add milk and cream. Add remaining ingredients beating thoroughly. Dip the cooked cardoons into batter and fry in hot olive oil. Drain on paper toweling.

When buying cardoons-look for yellow color. Clean and pull strings off just like celery. Cut into 4 inch pieces. Boil for about 30 minutes until tender.
