Quick Gluten-Free Bread

This bread is great for people with gluten intolerance. (Check ingredients on packages to ensure they are gluten-free.) This dense bread goes well with jam or, oddly enough, cottege cheese.

- 3 cups oat flour
- 1 Tbsp baking powder
- 1 Tbsp sugar
- 1-1/2 cups club soda
- 1 Tbsp caraway seed or flaxseed

Preparation
Step 1
Preheat oven to 375 degrees.
Spray 8-1/2" x 4" x 2" bread pan with non-stick cooking spray.
Combine oat bran flour with baking powder, seeds and sugar.
Combine club soda with flour mix until flour is just moistened.
Pour batter into bread pan.
Bake for 1 hour. Makes one loaf.
It is true it did not rise much but it is not very crumbly. you will definitely not find it like a normal bread. it is a dense bread. i loved the taste of it with a slice of cheese or you could even try your favorite jam. what i liked was that it is very easy to assemble and make.
