Ingredients

  • Chips; 3 large baking potatoes,washed and dried. countertop fryer 300 F
  • Tempura-Battered Fish
  • 1 medium egg
  • 1 cup cold sparkling water,club soda or tap water flvoured with lemon or lime
  • 1/2 cup plain flour
  • 12 portions haddock filet(5 oz/100g each),patted dry
  • sea salt,to tasre
  • 1 lemon,sliced

Step 1

Heat the oil to 300 F in a fryer.Cut the potatoes into shoestring-size pieces.Prepare a large sheet tray covered in paper towel and place it near the fryer.In batches that do not overcrowd the fryer,cook the shoestring potato fries for 4-5 min.,until they just begin to colour.Remove the potatoes from the oil and place them on the paper towel. (This process is called blanching and results in the crispiest fries.)Repeat with the remaining potatoes and let the fries cool.After the potatoes are cool,discard the paper towel.Reserve the fries until you are ready for the high-temperature fry.
Prepare the batter immediately before use.Reheat oil to 350 F.Beat the egg in a bowl and add the cold water.(The water must be as cold as possible,as this prevents the batter from absorbing too much oil,keeping it light and crispy.)
Lightly mix in the flour with a fork and beat gently.Don't worry too much about lumps.Dip the fish pieces into the batter and allow most of it to come off.Only a very thin layer of batter should remain on the fish.Place 1-2 pieces of fish in the fryer carefully and cook 5 min.,or until golden brown and crispy.Make sure that you do not crowd the fish in the fryer.Remove the fried fish to a tray covered with paper towel and sprinkle with some sea salt.Repeat with remaining fish.Place in hot oven for a couple of min.while you finish the fries.In small batches,drop the potatoes into the now hot oil and cook until crispy,1-2 min.Remove the fries from oil to paper tpwel-covered tray and season with sea salt.Serve the fish on top of the chips with a slice of lemon,some Apple Tartar Sauce,and maybe some malt vinegar in tradytional English style
