Ingredients

  • Dumplings:
  • 2 boneless skinless chicken breasts cutup
  • 1 T olive oil
  • 2 large crushed garlic cloves
  • 16 oz baby onions
  • 1 c quartered medium mushrooms
  • 1/4 c butter
  • 1/4 c flour
  • 3 c chicken broth
  • 16 oz whole baby carrots
  • 9 9
  • oz frozen baby peas
  • 1 3/4 c bisquick
  • 1/4 c chopped parsley
  • 1/2 c milk

Preparation

Step 1

In skillet, over medium heat, heat oil and add chicken. Brown for about 5 minutes, till golden. Add the garlic, onions, mushrooms and cook for an additional 5 minutes until tender. Remove the mixture to a separate bowl.

In same skillet melt butter and add flour cooking for 5 minutes, till golden. Add chicken broth and cook for 10 minutes, stirring constantly till thickened. Add carrots and peas along with the chicken. Bring to a boil and cover.

In medium bowl combine the dumpling ingredients and drop by equpal amounts into the hot gravy mixture. Return to a boil, reduce heat to low and simmer covered for about 10 minutes, until the dumplings are light and fluffy (firm to the touch).


Alternative to Stew would be chicken pot pies. Prepare the chicken stew as directed, without dumplings. Place the chicken mixture in casserole and top with layers of phyllo dough/melted butter for each layer. Bake at 350 for 30 minutes. Phyllo will be flakey.
